Continue reading With passion and dedication, Daniel devotes himself to breeding and caring for his animals, as well as producing traditional delicacies. His livestock includes around 60 Iberico pigs – a breed known for its finely marbled meat and distinctive flavor. The animal husbandry is complemented by Scottish Highland cattle and Black Angus cattle, which spend the entire year on the idyllic Fane Alm. Their hardy nature and relaxed lifestyle are a perfect match for the alpine environment.
Recently, Daniel has also been granted use of a listed barn in Vals – a place he has transformed into a true treasure trove. Inside are a smoking chamber and a storage room where speck, salami, and Kaminwurzen are aged. Using traditional methods and great patience, true delicacies are crafted here.
Daniel also cultivates a field where a variety of herbs and vegetables are grown for use in our kitchen.
